Summary: The role of lactic acid bacteria (LAB) as probiotics in promoting human or veterinary health has attracted increasing interest. Screening approaches have been used to identify LAB strains that meet minimal requirements for safety and functionality, including natural antioxidant properties. In this study, several in vitro antioxidant assays were conducted to evaluate the antioxidant properties of different LAB strains, and some showed promising results that could potentially be applied as natural antioxidants in fermented food products.

Bacteriocins from lactic acid bacteria and their potential clinical applications

They have been recognized as a potential alternative to conventional antibiotics due to their diverse functions and mechanisms of action. Recent studies have found that bacteriocins from lactic acid bacteria can control bacterial and viral infections and may serve as potential contraceptives. However, further research is needed to obtain a deeper understanding of these bacteriocins.

Summary: Enterococcus faecium ST20Kc and ST41Kc isolated from kimchi produce bacteriocins with strong activity against Listeria monocytogenes and various Enterococcus spp. The antimicrobials are proteinaceous and stable, with a bactericidal effect on targeted bacterial strains. Both strains are susceptible to antibiotics and potentially produce additional antimicrobial compounds with metabolomics analysis.

Antimicrobial properties of Pediococcus acidilactici and Pediococcus pentosaceus isolated from silage

Summary: This study isolated two multifunctional bacteriocin-producing Pediococcus strains from silage samples in Bulgaria, which showed strong antimicrobial activity against Listeria, vancomycin-resistant Enterococcus, and various molds. Metabolomic analysis revealed the production of antifungal metabolites by the strains. This research provides new insights into the potential of Pediococcus strains in controlling pathogens and molds.

Summary: Enterococcus spp., particularly bacteriocinogenic Enterococcus faecium strains, exhibit strong antimicrobial activity against Listeria spp. and vancomycin-resistant enterococci. However, concerns about their safety for human consumption persist, prompting further research into potential virulence factors and beneficial properties of these strains, including probiotic potential and production of desirable enzymes. Further assessments under in vivo conditions are needed to validate their potential applications.

Bacteriocinogenic Bacillus spp. Isolated from Korean Fermented Cabbage (Kimchi)-Beneficial or Hazardous?

Summary: Bacillus velezensis, Bacillus amyloliquefaciens, and Bacillus subtilis strains isolated from artisanal-produced kimchi showed antimicrobial activity against Listeria monocytogenes, with some strains possibly having additional non-proteinaceous molecular structure related antimicrobial activity. These strains also expressed surfactin as an additional factor in their complex antimicrobial activity. Additionally, the studied Bacillus strains were resistant to some evaluated antibiotics and were positive producers for biogenic amines production.
