Dandelion Flowers as an Additive to Wheat Bread: Physical Properties of Dough and Bread Quality

Summary: The addition of dandelion flowers to wheat flour can increase water absorption, dough stability, as well as mineral, fiber, and fat content in bread. However, it has no positive effect on bread quality, leading to a decrease in loaf volume and crumb lightness, while increasing hardness and yellowness. Dandelion flowers enhance the antioxidant capacity and phenolic content in bread. Therefore, dandelion flowers can be a valuable ingredient for bread fortification, but the substitution of wheat flour should not exceed 2-3% in consideration of sensory results.

Effect of Production Technology Intensity on the Grain Yield, Protein Content and Amino Acid Profile in Common and Durum Wheat Grain

Summary: Products derived from wheat grains are an important source of protein in people's daily diet. Genetic factors, habitat conditions, and cultivation techniques all influence the synthesis of protein compounds in wheat grains. This study found that production technology and genotype significantly affect the protein content and amino acid composition of wheat grain, with durum wheat having higher protein content. Increasing production intensity had a positive impact on the total protein content and individual amino acids, with lysine being the limiting amino acid for protein value and being less deficient in grain from intensive cultivation.

Wheat Bread Enriched with Black Chokeberry (Aronia melanocarpa L.) Pomace: Physicochemical Properties and Sensory Evaluation

Summary: The aim of this study was to analyze the physicochemical and sensory properties of wheat bread enriched with chokeberry pomace. The addition of pomace increased water absorption, caused a decrease in dough stability, and resulted in decreased bread volume and increased crumb hardness. However, the pomace-enriched bread had higher contents of minerals, dietary fiber, phenolic compounds, and antioxidant activity. Sensory evaluation suggested that 3% addition of pomace should be the maximum. The addition of 3% pomace increased dietary fiber, ash, fat, and phenolics content, while reducing protein and carbohydrate content.

The Experimental Development of Bread with Enriched Nutritional Properties Using Organic Sea Buckthorn Pomace

Summary: In this study, sea buckthorn pomace was utilized to make bread with enhanced properties. The pomace, a valuable by-product of the industry, contains beneficial compounds for health. The utilization of sea buckthorn by-products promotes a circular and sustainable economy. The results showed that the developed bread had higher nutritional characteristics and was favored by consumers when 8% sea buckthorn powder was added.

Selected Physico-Chemical, Nutritional, Antioxidant and Sensory Properties of Wheat Bread Supplemented with Apple Pomace Powder as a By-Product from Juice Production

Sensory evaluation revealed no significant differences between the groups in terms of taste and texture.
