The results showed that PACR could reduce oxidative damage and inflammatory response, restore lipid levels, decrease the level of liver and colon lesions, and function in protecting the liver and colon. The study suggests that PACR could be used as a supplement to decrease blood glucose, relieve T2DM, and reduce oxidative stress and inflammatory response by inhibiting the activation of the p38 MAPK signaling pathway.

This review summarizes the roles of oxidative stress in the pathogenesis of diabetes, the extraction method of mushroom polysaccharides, and their potential biological mechanisms associated with anti-diabetic effects. Future perspectives include exploring the structure-activity relationship of mushroom polysaccharides, developing synergistic foods, and conducting well-controlled clinical trials for better understanding and application of mushroom polysaccharides in diabetes management.
