Effects of Cellulase and Lactic Acid Bacteria on Ensiling Performance and Bacterial Community of Caragana korshinskii Silage

Summary: The effects of cellulase and lactic acid bacteria (LAB) on Caragana korshinskii silage were evaluated in this study. The addition of cellulase and LAB significantly decreased pH, dry matter loss, and ammonia nitrogen content. The CE group showed a significant decrease in acid detergent fiber, neutral detergent fiber, and acid detergent lignin, as well as an increase in water-soluble carbohydrates, acetic acid, and lactic acid concentrations compared to the CK and LAB groups. The addition of cellulase and LAB also affected the bacterial community and metabolic pathways in the silage.

Analysis of the relationship between microorganisms and flavour development in dry-cured grass carp by high-throughput sequencing, volatile flavour analysis and metabolomics

Summary: The complex microbial community in traditional dry-cured grass carp plays a crucial role in flavor formation. Through high-throughput sequencing, volatile flavor analysis, and metabolomics, it was found that specific microorganisms, such as Staphylococcus, are closely related to the development of flavors in dry-cured fish. Furthermore, correlations between microbial composition, volatile indicators, and flavor metabolites were significant, shedding light on the mechanism of flavor formation during fermentation in dry-cured fish.

Effects of Isolated LAB on Chemical Composition, Fermentation Quality and Bacterial Community of Stipa grandis Silage

The Impact of Different Withering Approaches on the Metabolism of Flavor Compounds in Oolong Tea Leaves

Summary: This study conducted complementary metabolomic and proteomic analyses on solar- and indoor-withered oolong tea leaves to elucidate the mechanisms underlying the formation of flavor determinants during the early stage of oolong tea processing. The analysis identified a total of 978 non-volatile compounds and 152 volatile compounds, with differential accumulation of flavonoids and esters in different tea samples. Pathway enrichment analysis revealed that phenylpropanoid and flavonoid metabolisms, as well as protein processing in the endoplasmic reticulum, were the major pathways distinguishing the tea samples. The joint protein-metabolite analysis showed dynamic and distinct changes in the biochemical network induced by multiple stresses during the withering step, leading to decreases in flavonoids and amino acids. Furthermore, fruity and floral aromas, especially volatile terpenoids and phenylpropanoids/benzenoids, were retained or accumulated in the solar withered leaves, potentially contributing to the characteristic flavor of oolong tea made by indoor withered leaves.

Effects of Lactiplantibacillus plantarum inoculation on the quality and bacterial community of whole-crop corn silage at different harvest stages

Adding cellulase and lactic acid bacteria at the appropriate moisture content could be helpful for producing high-quality oat silage and enhance the effects of bacteria and enzymes.

Research on pH Value Detection Method during Maize Silage Secondary Fermentation Based on Computer Vision

Summary: In this study, a quantitative prediction model for pH value change during the secondary fermentation of maize silage was constructed based on computer vision. The study found that color features had a higher correlation with pH value compared to texture features, and could better reflect the dynamic changes in pH value. Among the different models compared, RFR model 2 was the most efficient and accurate, and was able to predict pH value the best.
