Effects of microbial interspecies relationships and physicochemical parameters on volatile flavors in sorghum-based fermented grains during the fermentation of Shanxi light-flavored liquor

Summary: This study used high-throughput technology to reveal the core microbial community in sorghum-based fermented grains and quantify the impacts of physicochemical parameters and microbial interspecies relationships on volatile flavors. The results showed that the relative content of esters and alkanes changed during fermentation, and the trends of temperature, moisture, alcohol content, and reducing sugar varied. Lactobacillus, Streptomyces, and Acetobacter were identified as the dominant bacterial genera, while Issatchenkia, Torulaspora, and Pichia were the main fungal genera.

Association between microbial community composition and quality indicators of strong-flavor Daqu of different producing regions in China

Moisture and six other quality indicators were detected. Spearman correlation analysis revealed the relationships between microbial community and quality indicators. This research provides insights into the relationship between microbial community and quality indicators of SFD.

Insights into the mechanism of flavor compound changes in strong flavor baijiu during storage by using the density functional theory and molecular dynamics simulation

Summary: The aging process/storage is crucial for improving the organoleptic quality of strong flavor baijiu (SFB). Through density functional theory (DFT) and molecular dynamics (MD) simulation, it was found that the concentrations of acids increased and those of esters decreased during SFB storage due to differences in activation energy. The major contributor to SFB was electrostatic interaction, with the ethanol-water system containing acids showing stronger electrostatic energy and more hydrogen bonds.
