Production of Fungal Pigments: Molecular Processes and Their Applications

Lan Lin et al.

Summary: Due to the negative impacts of synthetic colorants, natural pigments from plants and microbes have become a valuable source for various industries. Fungi are excellent pigment producers, while plants are limited by seasonal and geographic factors. This review explores the taxonomy, biosynthesis, environmental factors, and future trends of pigmented fungi and fungal pigments.

Identification of metabolites from edible mushroom Morchella sextelata and their biological evaluation

De-Xian Li et al.

Summary: Fourteen metabolites were isolated from the fruiting body of Morchella sextelata, including one undescribed compound morchesexten A. The structures and absolute configurations were determined through spectroscopic data and quantum chemical computational methods. The isolated compounds were also evaluated for their anti-inflammatory and antioxidant activities, with compounds 10-12 showing inhibitory effects on nitric oxide production and compounds 7 and 9 exhibiting strong antioxidant effects.

Extraction, physicochemical properties, and antioxidant activity of natural melanin from Auricularia heimuer fermentation

Yinpeng Ma et al.

Summary: This study investigated the effects of alkali-soluble pH, acid precipitation pH, and microwave time on the extraction yield of Auricularia heimuer melanin (AHM) from fermentation. The optimized extraction conditions were alkali-soluble pH of 12.3, acid precipitation pH of 3.1, and microwave time of 53 min, resulting in an AHM extraction yield of 0.4042%. AHM exhibited similar absorption properties to melanin from other sources and showed strong free radical scavenging activities.

In Silico Characterization of the Physicochemical and Biological Properties of the Pink (Pleurotus djamor var. salmoneostramineus) Oyster Mushroom Chromoprotein

Monica A. Valdez-Solana et al.

Summary: This study conducted a structural analysis and predicted the physicochemical and biological properties of the pink chromoprotein. The results showed that it is a protein with a molecular weight of 23,712.5 Da and an isoelectric point of 7.505, with glycation capacity in the Ser6 residue. The study also highlighted the important residues involved in the binding of the prosthetic group and the interaction with the Mg2+ ion and eumelanin. The findings suggest that the pink chromoprotein plays a critical role in melanogenesis and melanin polymerization, but further experimental studies are needed to understand its mechanism of action and enzymatic activity type.

Isolation and identification of pigments from oyster mushrooms with black, yellow and pink caps

Yan Zhang et al.

Summary: The cap color of oyster mushrooms is an important commercial trait, determined by melanin which is a mixture of eumelanin and phaeomelanin. The color variation in caps is due to differences in the quantities and relative proportions of these melanin types. Melanin units in oyster mushrooms are likely located in the cell wall, providing fundamental knowledge for future studies on color formation in mushrooms.

Light Signaling Regulates Aspergillus niger Biofilm Formation by Affecting Melanin and Extracellular Polysaccharide Biosynthesis

Wenjun Sun et al.

Summary: Light serves as an important signal source in regulating physiological processes, morphogenesis, and secondary metabolites in fungi, specifically Aspergillus niger. Light signaling in A. niger biofilm production is actively induced by the activation of the RlmA transcription factor in the MAPK signaling pathway. The study highlights the significance of melanin synthesis under light illumination, emphasizing the potential for developing a light-controlled biofilm method to enhance industrial fermentation processes.
