Structure characterization, antioxidant capacity, rheological characteristics and expression of biosynthetic genes of exopolysaccharides produced by Lactococcus lactis subsp. lactis IMAU11823

Min Li et al.

Summary: Exopolysaccharides (EPSs) from Lactococcus lactis subsp. lactis IMAU11823 were found to have strong reducing power and no cytotoxicity. The EPSs had different sugar compositions and molecular weights, with EPS-1 being a linear structure composed of glucose and mannose, and EPS-2 being a more complex, non-linear structure composed of mannose, glucose, and rhamnose. Furthermore, a biosynthesis model for EPS production in the IMAU11823 strain was proposed. This study broadens the understanding of the formation, structure, and function of complex EPSs produced by Lactococcus lactis subsp. lactis IMAU11823.

Combined crizotinib and endocrine drugs inhibit proliferation, migration, and colony formation of breast cancer cells via downregulation of MET and estrogen receptor

Nehad M. Ayoub et al.

Summary: The study found that the combination of crizotinib and endocrine drugs significantly inhibited the growth and migration of breast cancer cells, possibly by reducing the expression of multiple key proteins. This suggests a potential role for MET inhibitors in breast cancer treatment as monotherapy or in combination with endocrine drugs.

Cream cheese made with exopolysaccharide-producing Lactococcus lactis: Impact of strain and curd homogenization pressure on texture and syneresis

Georg Surber et al.

Summary: This study investigated the impact of curd homogenization pressure and Lactococcus lactis strains with different EPS types on texture, syneresis, and microstructure of cream cheese. The presence of non-ropy EPS resulted in higher firmness and serum retention, while ropy EPS contributed to higher yield stress and creaminess. The cluster analysis identified specific EPS-pressure combinations that produced cream cheese with high firmness and serum retention, suggesting potential industrial applications.
