Stability and antioxidant activity of chitosan/beta-Lactoglobulin on anthocyanins from Aronia melanocarpa

Chunping Chen et al.

Summary: The interest in the anthocyanins from Aronia melanocarpa (AAM) lies in their potential health benefits, but their poor stability limits their application. Therefore, the preparation conditions of chitosan/beta-lactoglobulin encapsulating AAM (M-AAM) were optimized to improve their stability. The encapsulation significantly improved the retention rate of anthocyanins and enhanced their antioxidant effect.

Impact of anthocyanin component and metabolite of Saskatoon berry on gut microbiome and relationship with fecal short chain fatty acids in diet-induced insulin resistant mice

Ruozhi Zhao et al.

Summary: Previous studies have shown that Saskatoon berry powder (SBp) can reduce fasting plasma glucose, insulin resistance, lipids, and inflammatory markers in insulin resistant rodents. The present study investigated the effects of a high fat-high sucrose (HFHS) diet supplemented with SBp, cyanidin-3-glucoside (C3G), or protocatechuic acid (PCA) on metabolic and inflammatory markers in mice. The results suggest that C3G and PCA in SBp contribute to its beneficial effects on metabolism and inflammation, and certain changes in the fecal microbiota may play important roles in these effects.
