Production of Value-Added Products as Food Ingredients via Microbial Fermentation

Attia Iram et al.

Summary: Humankind has been utilizing food fermentations unknowingly since the creation of bread and cheese. Microbial fermentation has been extensively used for production of commodity chemicals and natural food ingredients. This review summarizes the prominent food ingredients and novel fermentation food products currently being produced via microbial fermentation, along with strategies to enhance such processes and the potential of economical feedstocks for value-added products.

Dual 6Pβ-Galactosidase/6Pβ-Glucosidase GH1 Family for Lactose Metabolism in the Probiotic Bacterium Lactiplantibacillus plantarum WCFS1

Laura Plaza-Vinuesa et al.

Summary: Intestinal lactic acid bacteria can alleviate lactose maldigestion by promoting lactose hydrolysis. This study found that protein extracts from probiotic bacterium Lactiplantibacillus plantarum WCFS1 possess two metabolic pathways for lactose metabolism, involving β-galactosidase (β-gal) and 6P β-galactosidase (6P β-gal) activities. One of the proteins, Lp_3525, exhibited high 6P β-galactosidase activity and may play a role in lactose maldigestion management.

Characterization of Bacillus spp. isolated from the intestines of Rhynchocypris lagowskii as a potential probiotic and their effects on fish pathogens

Mahmoud M. Elsadek et al.

Summary: Probiotics isolated from fish intestinal microbiota, specifically Bacillus velezensis, Bacillus aryabhattai, and Bacillus mojavensis, showed tolerance to gastrointestinal conditions and exhibited anti-pathogenic activity against multiple tested strains. These strains also demonstrated safety and the ability to produce necessary enzymes, making them a promising candidate for probiotic use in aquaculture.

Development of bioactive solid support for immobilized Lactobacillus casei biofilms and the production of lactic acid

Luis J. Bastarrachea et al.

Summary: The modification of polypropylene with chitosan was found to enhance the generation of Lactobacillus casei biofilms and their lactic acid production. Biofilms grown in rich media produced significantly more lactic acid, while the chitosan-modified polypropylene harbored more cells compared to the control. The deposition of nutrients and biomass on the chitosan-modified polypropylene was confirmed to be higher, with thicker biofilms observed when grown in rich media.

Development and characterization of an exopolysaccharide-functionalized acid whey cheese (requeson) using Lactobacillus delbrueckii ssp. bulgaricus

Sara Carrero-Puentes et al.

Summary: This study demonstrates the feasibility of obtaining acid whey cheese functionalized with exopolysaccharide (EPS) produced in situ by fermentation with Lactobacillus delbrueckii. The presence of EPS improved production yield, textural properties, and worked as a carrier for probiotic Lactobacillus paracasei.

Effect of linear and branched fructans on growth and probiotic characteristics of seven Lactobacillus spp. isolated from an autochthonous beverage from Chiapas, Mexico

Jorge Ivan Ramirez-Perez et al.

Summary: This study evaluated the effects of linear and branched fructans on the growth and probiotic characteristics of seven Lactobacillus strains. The results showed that these strains were able to grow using agave and chicory fructans, and the fructans significantly influenced the production of organic acids. All strains also exhibited high survival rates under simulated gastrointestinal conditions.

Context-dependent differences in the functional responses of Lactobacillaceae strains to fermentable sugars

Ronit Suissa et al.

Summary: In this study, we compared the effects of different carbohydrates on the lifestyles of five lactic acid bacteria (LAB) strains. We found that fermentable sugars triggered strain-specific changes in carrying capacity and affected microbial aggregation, colony development, and attachment to mucin. The addition of a buffering system improved the survival of most tested probiotic strains, but the formation of biofilms and aggregation capacity were responsive to the carbohydrate provided rather than to the acidity.
