Optimization of Atmospheric Cold Plasma Treatment with Different Gases for Reduction of Escherichia coli in Wheat Flour

Comparison of the Effect of Plasma-Activated Water and Artificially Prepared Plasma-Activated Water on Wheat Grain Properties

This article reviews the composition and properties of PAW prepared by different methods, and finds no significant difference between PAW prepared by plasma treatment and that prepared by mixing the active ingredients. The research also shows that PAW promotes germination and growth of wheat grains, and effectively decontaminates bacteria and yeast.

However, no significant changes were observed in other indicators such as pH, b* value, elasticity, chewiness, thiol value, and TVB-N value.

Summary: The direct and indirect bactericidal effects of dielectric barrier discharge cold atmospheric-pressure microplasma were studied in an air and plasma jet generated in an argon-oxygen gas mixture. Direct treatment using air was found to be the most effective, showing a significant reduction in bacterial count within just 3 minutes. Increasing treatment time led to a decrease in oxygen concentration in the water and a reduction in absorbance peaks related to NO2- and NO3- concentration, indicating denitratification and denitritification in the treated water.

Summary: The study demonstrates the potential use of in-package cold plasma (CP) treatment for non-thermal microbial inactivation of Korean rice cakes (KRC). By optimizing the CP treatment with increased time and number of rice cakes in the package, a significant reduction in microbial activity was achieved. The CP treatment also effectively inactivated indigenous yeast and molds as well as Salmonella in KRC, while maintaining color and firmness with the surface temperature below 22°C.
