Summary: By transferring the nisin gene cluster to a strain with low lactate dehydrogenase activity, high nisin production was achieved. Using dairy waste as the fermentation substrate, along with redox cofactor regeneration and the addition of metal ions, a high nisin titer was successfully obtained. This method is 100% natural, robust, and sustainable for producing food-grade nisin and acetoin from waste dairy products.
