Measuring pH of skim milk and milk permeate at ultra-high temperatures at laboratory and pilot scale

Summary: The study examined the changes in pH of skim milk and skim milk ultrafiltration permeate on heating from 25 to 140 degrees C. The decrease in pH with increasing temperature up to 140 degrees C was found to be non-linear. The reduction in pH was attributed to hydrogen ion release caused by changes in the milk mineral balance. The presence of milk proteins provided little buffering against pH drop.

Temperature effects on calcium binding to caseins

Summary: The kinetics of calcium ion binding to caseins and casein ingredients was studied in this research. It was found that calcium binding is important for bioaccessibility of calcium and is influenced by temperature. The reaction rate of sodium caseinate is faster compared to caseins, and calcium binding is controlled by enthalpy/entropy compensation.

Influence of calcium and magnesium on the secondary structure in solutions of individual caseins and binary casein mixtures

Summary: The addition of Ca and Mg increased beta-sheet structures and decreased triple helices and turns in both individual and binary mixtures of caseins, indicating binding of cations to similar sites. Ca had stronger affinity for caseins and reduced electrostatic repulsion, leading to an increase in hydrophobic interactions and beta-sheet structures.
