Effect of Arthrospira platensis incorporation on nutritional and sensory attributes of white chocolate

Summary: This study aimed to improve the nutritional and sensory properties of white chocolate by incorporating Arthrospira platensis. The addition of 4% A. platensis led to significant increases in protein, amino acids, lipids, and minerals. The sensory scores of the nutrient-enriched products were not significantly different from the control chocolate. Principal component analysis distinguished these products based on their physical, biochemical, and nutritional contents.

BRS Clara raisins production: Effect of the pre-treatment and the drying process on the phenolic composition

Summary: Cloning techniques have been used to improve the agronomic traits of nine fine cocoa varieties, resulting in variations in the concentrations of bioactive amines, phenolic compounds, and antioxidant potential of dark monoclonal chocolates. The chemometric models based on FTIR data provided satisfactory predictions for the concentrations of amines, phenolic compounds, and antioxidant activity, confirming the significant contribution of amines to the antioxidant potential of chocolates. The analytical method (DPPH vs. Rancimat) also affected the results of antioxidant activity in the chocolates.
