Specialty and high-quality coffee: discrimination through elemental characterization via ICP-OES, ICP-MS, and ICP-MS/MS of origin, species, and variety

Fosca Vezzulli et al.

Summary: This study established the elemental profiling and origin of coffee samples using various analytical techniques. Linear discriminant analysis was applied to distinguish different coffee species and geographical origins based on the mineral composition. The results showed that certain elements, including calcium, barium, cadmium, rubidium, and strontium, played significant roles in differentiating coffee species and geographical origins.

Kurtosis-based projection pursuit analysis to evaluate South American rapadura

Michel Rocha Baqueta et al.

Summary: Through Kurtosis-based projection pursuit analysis (kPPA), differentiation between South American rapadura producers was achieved, revealing significant inter-and intra-country differences, especially between Brazilian and Ecuadorian rapadura. The multivariate exploration with kPPA extracted information from rapadura effectively, even though it is a very artisanal product, and proved to be useful in separating classes.

Association of Altitude and Solar Radiation to Understand Coffee Quality

Daniel Soares Ferreira et al.

Summary: This study analyzed the influence of environmental conditions on the quality of Arabica coffee and found that higher altitude and afternoon sun exposure resulted in better coffee quality. On the other hand, lower altitude and morning sun exposure showed a greater correlation with physical and sensory quality parameters.

Edaphoclimatic conditions and the soil and fruit microbiota influence on the chemical and sensory quality of the coffee beverage

Marinalva Maria Bratz Simmer et al.

Summary: This study explores how the microbial communities (bacteria and fungi) of the soil and fruits of coffee trees can change depending on the harvest season, and how this affects the chemical and sensory quality of the coffee. The results suggest that edaphoclimatic factors and microbial communities are associated with the final quality of the coffee beverage.

Effect of fermentation on the quality of conilon coffee (Coffea canephora): Chemical and sensory aspects

Barbara Zani Agnoletti et al.

Summary: This study investigates the potential impact of fermentation on coffee quality by applying different fermentation processes to Coffea canephora var. conilon. Sensory analysis and chemical profiling were used to examine the quality and chemical composition of roasted coffees. The results identified several compounds, including chlorogenic acids, caffeine, gamma-butyrolactone, lipids, sugars, and acetic acid, as important factors influencing the different fermentation processes and the sensory quality of the coffee. Lipids were found to be a significant marker for coffee quality.
