Summary: Ultrasound-assisted emulsification can enhance the emulsifying and rheological properties of pork fat emulsions stabilized by myofibrillar protein at different protein/fat ratios, particularly at the ratio of 1:10. The treatment significantly increases emulsifying activity, emulsifying stability, and flow index, while decreasing viscosity coefficient of emulsions. Additionally, ultrasound reduces particle size of fat particles and evenly distributes emulsion droplets.
