Positive and significant correlations were observed among microbiological, sensory, and physico-chemical data, providing new insights into alternative preservation methods for minced chicken meat.

Effect of hurdle preservation on quality attributes of Palmyra sap (Borassus flabellifer) for shelf-life extension

Summary: The study investigated the preservation of palmyra sap using hurdle treatments, showing that TS2 sample had better quality and higher acceptability with delayed fermentation. The hurdle treatments proved effective in extending the shelf-life of refrigerated palmyra sap, lowering alcohol concentration and reducing microbial count. The shelf-life of hurdle treated palmyra sap can be predicted using a zero-order model during storage at both ambient and refrigerated conditions.
