Synergistic antibacterial activity and mechanism of action of nisin/carvacrol combination against Staphylococcus aureus and their application in the infecting pasteurized milk

Qingxiang Li et al.

Summary: This study detected the synergistic antibacterial effect of nisin and carvacrol, showing that the combination had better antibacterial activity against S. aureus compared to individual use and reduced the dosage of antibacterials. The combination could completely kill S. aureus within 8 hours, inhibit biofilm formation, and increase intracellular antibacterial level. In addition, the combination treatment effectively inhibited microbial reproduction in pasteurized milk.

Tropical plant products as biopreservatives and their application in food safety

Ramya Premanath et al.

Summary: Pathogenic bacteria in food can cause serious diseases, so preservatives are used to ensure microbial food safety. However, the negative effects of chemical preservatives have led to an increased demand for natural biopreservatives. Researchers are working to identify plant compounds with antibacterial activity against foodborne bacteria. The use of plant antimicrobials in food is challenging due to their interaction with food constituents. New approaches and technologies have been developed to incorporate plant antimicrobials into food, but more research is needed to optimize their use without affecting the sensory properties of the food.
