Exploring the unexplored: A characterization of vitamins and vitamers in white grape musts by high-performance liquid chromatography

Summary: A RP-HPLC method was developed for the direct analysis of different vitamers in white grape musts, and a comprehensive study of the vitamin composition in 85 grape musts was conducted. Evaluation of Four Indigenous Non-Saccharomyces Yeasts Isolated from the Shangri-La Wine Region (China) for Their Fermentation Performances and Aroma Compositions in Synthetic Grape Juice Fermentation

Summary: This study investigated the fermentation performances and aroma compositions of four indigenous non-Saccharomyces yeast isolates in synthetic grape juice. The results showed that these non-Saccharomyces yeasts had lower fermentative capacity and sugar to alcohol conversion rate, but higher volatile acidity compared to Saccharomyces cerevisiae. Among them, W. anomalus (DR-110) and Sac. vini (BZL-28) exhibited potential in enhancing wine aromas and complexity.

Assessment of chemical constitution and aroma properties of kiwi wines obtained from pure and mixed fermentation with Wickerhamomyces anomalus and Saccharomyces cerevisiae

Summary: The study found that the method of inoculation had a significant impact on the ethanol, color indices, and organic acids of the wines. Mixed fermentations with Wickerhamomyces anomalus and Saccharomyces cerevisiae produced more varieties and concentrations of volatiles compared to pure S. cerevisiae fermentation. Sequential fermentations increased the concentrations of esters and terpenes, while simultaneous inoculation enhanced the contents of esters and aldehydes in the wines.

This review explores the use of metabolomic analyses to study the impact of non-Saccharomyces yeasts on sensory characteristics, highlighting key species currently used and emphasizing the potential for their use in producing diverse fermented beverages.

Untargeted metabolomic analysis of Chinese red wines for geographical origin traceability by UPLC-QTOF-MS coupled with chemometrics

Analysis of the ethanol stress response mechanism in Wickerhamomyces anomalus based on transcriptomics and metabolomics approaches

Summary: High concentrations of ethanol (9% and 12%) significantly inhibited the growth of W. anomalus. Energy metabolism, amino acid metabolism, fatty acids metabolism, and nucleic acid metabolism were significantly influenced under 9% and 12% ethanol stress, which may be universal for W. anomalus in response to different concentrations of ethanol stress. Furthermore, extracellular addition of aspartate, glutamate, and arginine significantly alleviated ethanol damage and improved the survival rate of W. anomalus.
