Towards the discovery of goat meat quality biomarkers using label-free proteomics

Melisa Lamri et al.

Summary: This study aimed to identify protein biomarkers of meat quality traits in goats for the first time. The proteome of the Longissimus thoracis muscle was analyzed and differentially abundant proteins were found to be involved in muscle structure, energy metabolism, and heat shock proteins. Other proteins related to regulation, proteolysis, apoptosis, transport, binding, tRNA processing, and calmodulin-binding were also identified. Regression analyses showed the potential of these biomarkers to explain various meat quality traits.

The Extent and Rate of the Appearance of the Major 110 and 30 kDa Proteolytic Fragments during Post-Mortem Aging of Beef Depend on the Glycolysing Rate of the Muscle and Aging Time: An LC-MS/MS Approach to Decipher Their Proteome and Associated Pathways

Mohammed Gagaoua et al.

Summary: The study found that different rates of pH decline in post mortem muscle during conversion to meat have significant impact on the appearance of proteolytic breakdown products, with the proteome and associated pathways playing a crucial role in this process. The research also revealed that various biological pathways, such as muscle contraction, energy metabolism, and apoptotic mitochondrial changes, contribute to the proteolytic breakdown products in a pH-dependent manner. Additionally, proteins identified in the fragments are potential biomarkers for beef tenderness and quality traits.

Dark-cutting beef: A brief review and an integromics meta-analysis at the proteome level to decipher the underlying pathways

Mohammed Gagaoua et al.

Summary: The comprehensive characterization of the post-mortem muscle proteome sets a fundamental goal in meat proteomics. Proteomics tools have been utilized in foodomics to decipher meat quality variations, with a focus on dark-cutting beef. Various proteomics studies on cattle have investigated the changes in the post-mortem muscle proteome related to dark-cutting beef development. The results of this study provide insights into the major biological pathways underlying dark-cutting beef at the proteome level.

Insights on meat quality from combining traditional studies and proteomics

Peter P. Purslow et al.

Summary: This review explores how proteomics studies can confirm and extend knowledge of the mechanisms and factors underlying variations in beef colour and tenderness. While proteomics may overlook some sources of variations in beef toughness, it highlights the role of post-mortem energy metabolism in setting the conditions for development of meat colour and tenderness. Further experimental studies are needed to confirm the findings from data-driven proteomics analyses.

A Proteomic Study for the Discovery of Beef Tenderness Biomarkers and Prediction of Warner-Bratzler Shear Force Measured on Longissimus thoracis Muscles of Young Limousin-Sired Bulls

Yao Zhu et al.

Summary: Proteomics approach was used to study the Longissimus thoracis muscle of young Limousin-sired bulls in order to identify candidate protein biomarkers related to beef tenderness. A total of 34 proteins showed differential abundance between tender and tough groups, with MYOZ3, BIN1, and OGN being major proteins explaining 79% of the variability in predicting shear force values. This study confirmed existing knowledge and provided new insights into potential biomarkers for beef tenderness.

Shotgun proteomics for the preliminary identification of biomarkers of beef sensory tenderness, juiciness and chewiness from plasma and muscle of young Limousin-sired bulls

Yao Zhu et al.

Summary: Label free shotgun proteomics was used to analyze plasma and Longissimus muscle biopsies from Limousin-sired bulls, revealing 31 potential protein biomarkers associated with muscle structure, energy metabolism, heat shock proteins, oxidative stress, and proteolysis. Among these biomarkers, some were good predictors of sensory texture traits, and novel biomarkers from plasma showed significant correlations, suggesting potential for early assessment of beef sensory quality by processors.

Sensory Consumer and Descriptive Analysis of Steaks from Beef Animals Selected from Tough and Tender Animal Genotypes: Genetic Meat Quality Traits Can Be Detected by Consumers

Maurice G. O'Sullivan et al.

Summary: The study aimed to determine if genetical differences in tenderness affected the meat quality perceived by consumers. Results showed that animals with a Tender genotype were preferred for tenderness, juiciness, flavor, and overall acceptability over animals with a Tough genotype. This study suggests that genetic selection based on parental average merit can lead to differences in consumer preference.
