Revealing the bacterial abundance and diversity in brines from started Spanish-style green table olives

Summary: The influence of inoculum on bacterial communities of Spanish-style green table olive brines is limited. The size and structure of bacterial communities in olive brines inoculated with Lacti-plantibacillus plantarum were assessed. A new qPCR assay was developed to determine the abundance of this genus. The abundance of total bacteria and L. plantarum decreased during fermentation. Differences in populations were observed based on the container origin. Multiple bacterial genera within the Lactobacillacea family colonized and proliferated in spite of the use of a starter. The size and structure of bacterial communities were modulated by NaCl concentration.

Summary: The study found that alkaline treatment with 3.4% sodium hydroxide was the most suitable for processing small-sized green olives into Spanish-style table olives, as it resulted in the highest titratable acidity. Additionally, high levels of lactic acid bacteria on the fruit epidermis suggest that these olives may serve as carriers of functional bacteria after ingestion.
