An Overview of Traceback Investigations and Three Case Studies of Recent Outbreaks of Escherichia coli O157:H7 Infections Linked to Romaine Lettuce

Kari Irvin et al.

Summary: Leafy greens contaminated with Shiga toxin-producing E. coli have caused several foodborne illness outbreaks, with challenges in identifying the source of contamination. By examining traceback investigations of three outbreaks linked to romaine lettuce in 2018 and 2019, opportunities for improvement in traceback investigations were identified to ultimately prevent future outbreaks.

Development of Enokitake (Flammulina velutipes) mushroom cultivation technology using spent mushroom substrate anaerobic digestion residue

Shoji Ikeda et al.

Summary: The study found that spent mushroom substrate-anaerobic digestion residue (SMS-ADR) can be used as a medium base material for Enokitake mushroom cultivation, showing potential for food production. SMS-ADR pretreated with KOH and NaOH performed well in mushroom cultivation, similar to the standard medium, while SMS not involved in the anaerobic digestion process showed inhibitory effects on mycelial growth for Enokitake mushrooms.

Interpretative Labor and the Bane of Nonstandardized Metadata in Public Health Surveillance and Food Safety

James B. Pettengill et al.

Summary: Open-source DNA sequence databases are beneficial for public health, but incomplete and non-standard metadata can impact interpretative labor costs and foodborne outbreak detection and response. Improving the quality of sequence-associated metadata can lead to earlier detection of emerging food safety hazards and faster response to outbreaks.
