Infrared drying kinetics of Capsicum annuum L. var. glabriusculum (Piquin pepper) and mathematical modeling

Victor M. Ovando-Medina

Summary: The dehydration kinetics of Piquin pepper at different temperatures (70°C, 80°C, and 90°C) during infrared drying were studied. A mathematical model was used to predict the experimental data related to the moisture diffusivity coefficient. It was observed that increasing the drying temperature reduced the drying time but caused browning of the product at 90°C.

Artificial neural networks (ANNs) and multiple linear regression (MLR) for prediction of moisture content for coated pineapple cubes

Jitrawadee Meerasri et al.

Summary: The effects of edible coating and drying temperature on the properties of dehydrated pineapple cubes were investigated. Mathematical models and artificial neural networks were used for prediction. The results showed that higher drying temperature reduced drying time and moisture content, and edible coating had little effect on moisture diffusion and activation energy. Artificial neural networks models accurately predicted the moisture ratio and drying rate of dehydrated pineapple cubes, benefiting the food industry.
