In-vitro Digestibility Methods and Factors Affecting Minerals Bioavailability: A Review

The diversity of phytic acid content and grain processing play decisive role on minerals bioavailability in rice

Summary: Rice is a staple food for billions of people and its bioavailability of iron and zinc is affected by phytic acid. A study found that while a genotype with high iron content had low bioavailability, possibly due to its high phytic acid content. Phytic acid mainly affects the bioavailability of iron, but has less effect on zinc, which is evenly distributed in the rice grain. The study also identified genes related to phytic acid synthesis and grain-specific phosphorus transporter genes that are expressed during grain filling and correlated with phytic acid accumulation. This research provides insights for breeders to develop rice genotypes with higher bioavailability of iron and zinc by targeting phytic acid related genes.

In vitro macronutrient digestibility and mineral bioaccessibility of lentil-based pasta: The influence of cellular intactness

Summary: Recently, pulse ingredients with (partial) cellular intactness have been proposed as promising innovative food ingredients that slow down the digestion of macronutrients. This study compared the cooking quality and digestibility/bioaccessibility of lentil-based pasta prepared with different formulations. The incorporation of cellular ingredients significantly slowed down amylolysis and proteolysis, resulting in improved nutritional properties and potential for the development of innovative foods with targeted nutritional properties.

Antinutrient to mineral molar ratios of raw common beans and their rapid prediction using near-infrared spectroscopy

Solutions include zinc biofortification, the use of zinc biofertilizers, developing zinc-efficient crops, zinc supplementation, and dietary modification and diversification.
