Influence of waxy proteins on wheat resistant starch formation, molecular structure and physicochemical properties

Summary: This study investigated the influence of wheat waxy proteins on the formation, molecular structure, and physicochemical properties of type III resistant starch (RS3). The results showed that waxy deletions led to an increase in particle size, improved crystalline structure, and slower digestion of RS3, leading to improved physicochemical properties.

Changes in the chemical, physical, and sensory properties of rice according to its germination rate

Summary: This study found that the germination rate of rice samples is associated with their physicochemical properties, sensory quality, and seed viability. A lower germination rate leads to increased lipid oxidation, hardness, and most pasting properties of rice, while reducing seed viability, moisture content, and adhesiveness. Changes in germination rate also affect the cellular structure and metabolites related to the sensory quality of rice.

Evaluation of Hardness and Retrogradation of Cooked Rice Based on Its Pasting Properties Using a Novel RVA Testing

Summary: In this study, different heating and cooling programs were used to compare the pasting properties of various rice samples using a high-temperature-type Rapid Visco Analyzer. A new program at 120 degrees Celsius showed higher positive correlations with retrograded surface and overall hardness, absorbance of cooked rice, and resistant starch compared to the conventional program at 93 degrees Celsius. Estimation formulae were developed for predicting retrograded surface hardness for various kinds of rice, providing an efficient method for assessing the cooking properties of different rice samples.
