A Review of Phytic Acid Sources, Obtention, and Applications

Ana Paula Marinho Bloot et al.

Summary: Phytic acid (PA) is a substance extracted from oilseeds, legumes, cereals, nuts, and pollen, and purified through heating and/or stirring with acid solutions. It has beneficial health and physiological effects due to its antioxidant activity and ability to chelate Fe3+ ions. Recent studies have also shown its efficacy as a foodborne pathogens inhibitor.

Formation of Oxidative Compounds during Enzymatic Hydrolysis of Byproducts of the Seafood Industry

Mehdi Nikoo et al.

Summary: There is potential to increase sustainability in fishing and aquaculture by utilizing byproducts in enzymatic hydrolysis to produce protein hydrolysates for bioactive peptides. However, oxidative reactions during this process can affect the safety and bioactivity of the end product. Different byproducts require standardized hydrolysis procedures and testing methods. Controlling hydrolysis conditions and reducing oxidation are crucial for producing high-quality protein hydrolysates with various applications.

Lipid oxidation and antioxidant delivery systems in muscle food

Haizhou Wu et al.

Summary: This article discusses the principles, characteristics, and implementation of five novel antioxidant delivery methods in muscle-based foods. These methods include recyclable dipping solutions, encapsulation, cross-processing with nonmuscle antioxidant-containing raw materials, and applications of edible films/coatings and active packaging. The advantages of these technologies include low price, the possibility to control the antioxidant release rate, overcoming strong aromas from natural antioxidants, and valorizing antioxidant-containing raw materials from the food industry.

Phytic Acid against Clostridium perfringens Type A: A Food Matrix Study

Ana Paula Marinho Bloot et al.

Summary: This study evaluated the inhibitory effect of phytic acid (PA) on the growth of Clostridium perfringens and its potential use as a natural preservative in the meat industry. The results showed that PA effectively inhibited the germination of spores and the growth of vegetative cells. A mixture of PA-MD exhibited a similar or higher inhibitory effect compared to traditional preservatives in cooked sausages.

Healthy or not: Influencing attention to bias food choices

J. Schomaker et al.

Summary: This study investigated the impact of manipulating attention using directional cues on influencing people's decisions towards healthier choices. The results showed that participants were more likely to choose items that were cued by directional cues, even though the cues were not task-relevant. This biased choice behavior towards cued items was independent of the healthiness of the food items.

Review of the beneficial and anti-nutritional qualities of phytic acid, and procedures for removing it from food products

Ehsan Feizollahi et al.

Summary: Phytic acid, a primary phosphorus reserve in cereals and legumes, is considered an anti-nutritional factor due to its ability to bind minerals, proteins, and starch, limiting their bioavailability. However, it also offers health benefits such as reducing cancer risk and supporting heart health. Various processing techniques can be used to reduce phytic acid levels in foods, mitigating its anti-nutritional effects and creating potential for novel applications.

The effect of gradual addition of camelina seeds in the diet of rainbow trout (Oncorhynchus mykiss) on growth, feed efficiency and meat quality

Juha Koskela et al.

Summary: The study examined the effects of camelina seed in feed on rainbow trout performance and muscle nutritional composition. Camelina seed showed potential as a plant-based ingredient for rainbow trout feed, with no significant impact on fish growth and fat content, but a decrease in muscle moisture content and a slight effect on vitamin D-3 absorption.

Leticia Lopes da Costa et al.

Summary: In this study, it was found that supplementation of phytic acid at a low concentration (10.00 g/kg) promoted better performance and body composition of silver catfish, without negatively affecting digestive enzyme activity. Furthermore, phytic acid reduced prooxidant enzyme activity and increased antioxidant activity in the fish.

Perceived healthiness of foods: A systematic review of qualitative studies

Vinicius Rodrigues Arruda Pinto et al.

Summary: This study delves into consumers' perceptions of food healthiness, finding that such perceptions are primarily investigated from a quantitative perspective. Content analysis identified five dimensions, such as "misconception, knowledge or cognition," "pleasure," "healthiness importance," "purity," and "environmentally friendly or ethical issues." Information regarding self-directed benefits can influence consumers' expectations and taste preferences for healthy foods.
