Interaction between whey protein and soy lecithin and its influence on physicochemical properties and in vitro digestibility of emulsion: A consideration for mimicking milk fat globule

Summary: In this study, the interaction between soybean lecithin (SL) and whey protein (WP) in the milk fat globule (MFG) emulsion was investigated using spectroscopic techniques and in vitro digestion. The added SL changed the secondary structure of WP, and formed a complex through hydrophobic interaction and hydrogen bonding. The resulting SL-WP emulsion showed the smallest particle size and highest zeta potential at a SL to WP ratio of 1:3. The emulsion had high encapsulation efficiency, good stability, and similar fat digestion characteristics to human milk.

Antioxidant addition improves cholesterol and astaxanthin stability in dry salted shrimp

Summary: The addition of antioxidants, BHT and TBHQ, to cooked shrimp significantly inhibited the formation of cholesterol oxidation products (COPs) and astaxanthin degradation during solar drying. The antioxidants reduced COPs formation and protected astaxanthin, leading to a product with higher astaxanthin content and lower presence of hazardous COPs.

Lipid rafts may affect the coalescence of milk fat globules through phase transition after thermal treatment

Summary: This study investigated changes in fat globules and their membranes during heat processing of cow milk. The study found that the size of fat globules increased and their membrane was destroyed, leading to coalescence. Quantitative analysis and interfacial properties of mixed pea protein isolate-phospholipid adsorption layer

Selective antibacterial activities and storage stability of curcumin-loaded nanoliposomes prepared from bovine milk phospholipid and cholesterol

Impact of interactions between whey protein isolate and different phospholipids on the properties of krill oil emulsions: A consideration for functional lipids efficient delivery

Summary: This study examined the interactions between different phospholipids and whey protein isolate (WPI) and compared the physical characteristics and bioaccessibility of different emulsions. Hydrophobic interactions between the phospholipids and WPI were found to play a significant role, with increased unsaturation enhancing the interaction. The combination of phospholipids and proteins resulted in decreased particle sizes and improved emulsion stability, which was dose-dependent. The phospholipid-WPI emulsion was found to be effective in delivering functional lipids and improving the functional lipid ratios in a zebrafish model. In vitro digestion experiments also showed higher bioaccessibility of EPA, DHA, and astaxanthin in the phospholipid-WPI emulsions. This research provides valuable insights into the efficient delivery system of functional lipids using phospholipid-protein structures.
