Metabolomics and Proteomics Approach Using LC-Orbitrap HRMS for the Detection of Pork in Tuna Meat for Halal Authentication

Summary: This study developed an untargeted proteomics and metabolomics approach using LC-HRMS to detect pork adulteration in tuna meat (TM). Metabolomics combined with PCA and PLS-DA could differentiate and detect pork in adulterated TM samples. Proteomics analysis successfully detected peptide markers of pork from myoglobin, carbonic anhydrase 3, and beta-haemoglobin. Both proteomics and metabolomics could detect up to 0.5% of pork concentration in TM.

Multivariate versus machine learning-based classification of rapid evaporative Ionisation mass spectrometry spectra towards industry based large-scale fish speciation

Summary: Detection and prevention of fish food fraud are becoming increasingly important, requiring rapid and high-throughput fish speciation techniques. In this study, iKnife-REIMS and various multivariate and machine learning strategies were used to analyze 1736 samples of 17 commercially valuable fish species. The results showed that multivariate models achieved high accuracies, while machine learning models performed less well, particularly for white fish species. A real-time validated modelling strategy using PCA-LDA is proposed for rapid large-scale fish speciation in the industry.

Lipidomic fingerprinting of plasmalogen-loaded zein nanoparticles during in vitro multiple-stage digestion using rapid evaporative ionization mass spectrometry

Summary: A novel method using hollow dextran sulfate/chitosan-coated zein nanoparticles loaded with Plasmalogens (Pls) was proposed to assess the lipidomic fingerprint alteration of Pls-loaded zein NPs during in vitro multiple-stage digestion in real time. A total of 22 Pls in NPs were structurally characterized and quantitatively analyzed, and the lipidomic phenotypes at each digestion stage were evaluated by multivariate data analysis. The proposed method exhibited the potential for real-time tracking the lipidomic characteristics of nutritional lipid NPs digestion in the human gastrointestinal tract.

Investigation of the changes in the lipid profiles in hairtail (Trichiurus haumela) muscle during frozen storage using chemical and LC/MS-based lipidomics analysis

Results showed significant increases in PV and TBARS values, along with detection of 1223 lipids in 26 categories. High and low levels of differentially abundant lipids were found in frozen hairtail samples compared to fresh samples, indicating vulnerability to oxidation/hydrolysis due to unsaturated properties, potentially resulting from side-chain modifications and decomposition during long-term storage.
