Role of Yeasts on the Sensory Component of Wines

Patrizia Romano et al.

Summary: The aromatic complexity of wine is mainly influenced by the interaction between grapes and fermentation agents, with yeast playing a crucial role in the formation of aroma compounds. Yeast can contribute to the formation of compounds from primary metabolism, synthesis of specific metabolites, and modification of molecules present in the must.

Identification of European isolates of the lager yeast parent Saccharomyces eubayanus

Sean A. Bergin et al.

Summary: Lager brewing originated in 15th century Bavaria and is associated with cold weather brewing restrictions. Lager yeast, a hybrid of Saccharomyces cerevisiae and Saccharomyces eubayanus, is cold tolerant and is found only in industrial settings. Natural isolates of S. eubayanus were first discovered in Patagonia and have since been found in China, Tibet, New Zealand, and North America, but not in Europe. This study describes the first European strains of S. eubayanus isolated from a wooded area on a university campus in Dublin, Ireland, and provides genome analysis of these isolates.

The evolution and role of the periplasmic asparaginase Asp3 in yeast

Angela Coral-Medina et al.

Summary: The study of nitrogen assimilation in yeast is important for genetic, evolutionary, and biotechnological research. This study focused on the assimilation of asparagine, a significant nutrient source for some alcoholic fermentations. The researchers found that the ASP3 gene, which codes for a periplasmic asparaginase, may be an ancient Saccharomyces gene that has been lost over time but retained in certain fermentative environments. Additionally, they discovered that the presence of ASP3 does not provide a growth advantage in apple juice, highlighting the complex regulation of nitrogen assimilation in yeasts.

An indigenous Saccharomyces uvarum population with high genetic diversity dominates uninoculated Chardonnay fermentations at a Canadian winery

Garrett C. McCarthy et al.

Summary: This study uncovered a highly diverse population of S. uvarum dominating natural fermentations of Chardonnay grapes in Canada. Four strains played a leading role in the fermentations, with two of them being previously identified as dominant strains in Chardonnay fermentations at the same winery.

Impact of Nitrogen Addition on Wine Fermentation by S. cerevisiae Strains with Different Nitrogen Requirements

Ying Su et al.

Summary: Supplementation of nitrogen sources is important in modern oenology to prevent sluggish or stuck fermentation. The timing and type of nitrogen addition have different effects on fermentation kinetics and aroma production for yeast strains with low and high nitrogen requirements. Nitrogen addition at different stages of fermentation can significantly impact fermentation activity, nitrogen assimilation, and production of important metabolites.

Transcriptional Profile of the Industrial Hybrid Saccharomyces pastorianus Reveals Temperature-Dependent Allele Expression Bias and 'referential Orthologous Protein Assemblies

Soukaina Timouma et al.

Summary: Analysis of Saccharomyces pastorianus revealed that during temperature shifts, 35% of genes are regulated by extracellular leucine uptake. The majority of genes tend to preferentially express one parental allele, with S. eubayanus-like alleles significantly over-represented among genes related to cold acclimatization. Redundancy of parental alleles may impact the nature of protein complexes in the hybrid, as suggested by the gene balance hypothesis. This study sheds light on the transcriptional patterns of S. pastorianus and rationalizes its unique industrial traits at the expression level.
