Current trends in health-promoting potential and biomaterial applications of edible mushrooms for human wellness

Summary: Edible mushrooms are widely distributed worldwide and have enormous health benefits. They have been used as both folk medicine and healthy food since ancient times, but their health-promoting effects have not been fully explored. As a superfood, mushroom powder is an essential part of the human diet for improving health and immunity. Various bioactive components found in mushrooms, such as proteins, polysaccharides, terpenes, and lipids, have recently garnered attention for their therapeutic properties including anti-cancer, immunomodulatory, antihypercholesterolemia, antiviral, antidiabetic, and anti-inflammatory effects. Moreover, these isolated compounds have the potential for use in dietary supplements and medicines. A number of bioactive compounds such as ergosterol, gallic acid, and cordycepin have also been found to play a role in preventing or reducing the severity of COVID-19.

Amino acids as methyl donors for the formation of N, N-dimethylpiperidinium (mepiquat) in model systems and cooked mushrooms

Summary: New methylating agents for mepiquat formation were evaluated in model and mushroom systems. Mepiquat levels reached the highest at 1.97% in the Methionine/PipAc model system at 260°C for 60 minutes. Piperidine actively combined with methyl groups to form mepiquat in thermal reactions. Oven baking resulted in the highest mepiquat content of 63.22 ± 0.88 μg/kg. The study demonstrated that food constituents, especially amino acids, are the main precursors for mepiquat formation.

Formation, migration, derivation, and generation mechanism of polycyclic aromatic hydrocarbons during frying

Summary: This review summarizes the formation, migration, and derivation of polycyclic aromatic hydrocarbons (PAHs) in frying systems, hypothesizes possible mechanisms for PAHs generation during frying, and presents future research prospects. Factors such as high oil consumption, high temperature, long time, and oil rich in unsaturated fatty acids promote the formation of PAHs, while antioxidants inhibit their formation. The impact of proteins and carbohydrates in foods on PAHs formation remains inconclusive. PAHs formed during frying can migrate into food and air, and some may transform into more toxic derivatives. The generation of PAHs may be related to low barrier free radical-mediated reactions, and unsaturated hydrocarbons may serve as precursors. Isotope tracer technology and on-line detection may be employed in future studies to explore intermediates and elucidate PAHs generation mechanisms.

Effect of beef patties fortification with black garlic on the polycyclic aromatic hydrocarbons (PAHs) content and toxic potency

Summary: Nine different black garlic samples aged at varying temperatures and durations were added to beef patties at 0.5% and 1% ratios. Compared to raw garlic, black garlic reduced the formation of polycyclic aromatic hydrocarbons (PAHs) in the patties by 38.17% to 94.12%. The highest reduction was observed in the patties fortified with 1% black garlic aged at 70°C for 45 days. The addition of black garlic to the patties also reduced human exposure to PAHs and the associated cancer risk.

Effect of the fortification with astaxanthin on the quality parameters and heterocyclic amines content of meatballs

Summary: This study investigated the effects of astaxanthin usage on the quality parameters of meatballs and the formation of heterocyclic aromatic amines (HAAs). The addition of astaxanthin reduced the water content and pH values of meatballs. It also improved oxidative stability and color properties. HAAs formation increased with higher cooking temperatures, but astaxanthin addition inhibited HAAs formation at 200 degrees C.

Summary: The study investigated the effects of different brands of oven bags on the formation of HAA and migration of BPA in cooked chicken meats, finding that total HAA content ranged from 6.53 to 42.32 ng/g, with higher levels in breast meat. The use of oven bags reduced total HAA amount by 12% to 68.82%, but caused BPA migration, although the levels of HAA and BPA in all samples were not at a level to pose a risk to human health.
