Ultrasonic treatment combined with curdlan improves the gelation properties of low-salt Nemipterus virgatus surimi

Influence of L-arginine addition on the gel properties of reduced-salt white leg shrimp (Litopenaeus vannamei) surimi gel treated with microbial transglutaminase

Summary: This study aimed to investigate the effects of L-arginine (L-Arg) on the gel properties of reduced-salt shrimp surimi gel (SSG) treated with microbial transglutaminase (MTGase). The results showed that replacing NaCl with different concentrations of L-Arg in reduced-salt (0.5% NaCl) shrimp surimi treated with MTGase significantly increased the gel strength and texture of SSG, even at low L-Arg (0.5%) concentrations. However, 0.5% L-Arg added alone under low-salt conditions did not significantly improve the gel strength of SGG compared with the control SSG containing 0.5% NaCl. L-Arg and MTGase added together significantly increased the disulfide bonds and protein beta-sheet structure of SSG while improving the moisture distribution and rheological properties. The electrophoretic analysis and microstructure images revealed that L-Arg and MTGase together promoted the cross-linking of proteins in shrimp surimi to form a dense gel network structure. In conclusion, the combined treatment of L-Arg and MTGase significantly improved the gel properties of SSG and reduced the amount of NaCl. Therefore, the combined treatment of L-Arg and MTGase could enhance the quality of reduced-salt shrimp surimi products.

Ultrasound-assisted processing: Changes in gel properties, water-holding capacity, and protein aggregation of low-salt Hypophthalmichthys molitrix surimi by soy protein isolate

Summary: The study found that ultrasound combined with soy protein isolate processing has a significant effect on the gelling properties of low-salt silver carp surimi and the aggregation and conformation of myofibrillar protein. It improves protein structure by reducing alpha-helix and total sulfhydryl contents, increasing beta-sheet content and protein solubility, leading to the formation of a more stable and denser gel network with improved properties.

Summary: This study used different concentrations of curdlan to improve the quality degradation of konjac glucomannan (KGM) gels after commercial sterilization. The results showed that curdlan could delay the deterioration of KGM gels, with the best effect at 2.00%. Adding curdlan to KGM gels resulted in improved texture and structure, as well as reduced crystallinity.

Effect of carboxymethyl cellulose (CMC) on some physico-chemical and mechanical properties of unrinsed surimi gels

Summary: The study aimed to assess the impact of carboxymethyl cellulose (CMC) on the physico-chemical and mechanical properties of unrinsed surimi gels during heat treatment. The results indicate that the addition of CMC significantly (p < 0.05) enhanced the gel strength and texture properties of unrinsed surimi gels, and improved color perception compared to the control group. The inclusion of 0.5 and 1.5 g/100 g CMC also promoted the formation of a more uniform and compact gel network structure, resulting in improved water holding capacity and viscoelastic properties of the gels (p < 0.05). In conclusion, the appropriate addition of CMC as a food additive is beneficial for improving the gel properties of unrinsed surimi, with an optimal addition amount of 1.5 g/100 g determined in this study.

Ultrasound-assisted free radical modification on the structural and functional properties of ovalbumin-epigallocatechin gallate (EGCG) conjugates

Summary: The influence of ultrasound-assisted free radical modification on the structure and functional properties of OVA-EGCG conjugates was investigated. Ultrasound-assisted processing significantly increased the conjugating efficiency of OVA and EGCG and shortened the conjugating time. Covalent conjugates could be formed between OVA and EGCG, and modification in the conformation of OVA was induced by EGCG. Functional properties of OVA, including emulsification and antioxidant properties, were significantly improved after conjugation with EGCG, especially in ultrasound-assisted conditions.

Effects of ?-carrageenan on gel quality of threadfin bream (Nemipterus spp.) surimi containing salted duck egg white powder

Summary: This study investigated the combined effect of kappa-carrageenan and salted duck egg white powder (SDEWP) in improving the gel quality of threadfin bream surimi. The results showed that a combination of 0.5% kappa-carrageenan and SDEWP significantly increased the breaking force and deformation of the surimi gel, as well as improved its hardness, cohesiveness, gumminess, and chewiness. The expressible moisture content (EMC) was reduced, and proteolytic degradation was inhibited. The addition of kappa-carrageenan also improved the whiteness and microstructure of the gel.
