Effect of fluorescence dyes on wet gluten structure studied with fluorescence and FT-Raman spectroscopies

Summary: Fluorescence spectroscopy coupled with FT-Raman spectroscopy were used to investigate the effect of two fluorescent dyes (fluorescein and rhodamine B) on the structure of wet gluten. PCA analysis revealed correlations between fluorescence and Raman parameters, suggesting that the interaction mechanism between gluten and dyes depends on the functional groups present in the dye molecules.

Regulation mechanism of nanocellulose with different morphologies on the properties of low-oil gelatin emulsions: Interfacial adsorption or network formation?

Summary: In this study, cellulose nanocrystals (CNCs), cellulose nanospheres (CNSs), and cellulose nanofibrils (CNFs) were prepared and compared for their effects on the interfacial and emulsifying properties of gelatin/nanocellulose complexes. The addition of nanocellulose increased the surface hydrophobicity and apparent viscosity of the complexes, with CNCs and CNSs having the strongest and weakest effects, respectively. Increasing the nanocellulose concentration further improved the interfacial and emulsion stability.

Effect of extrusion temperature on the protein aggregation of wheat gluten with the addition of peanut oil during extrusion

Summary: The study found that extrusion temperature affects the protein components and aggregation of wheat gluten and wheat gluten-peanut oil complexes. Increasing extrusion temperature led to changes in protein content, extractability, and average molecular weight. Preparation, characterization and physicochemical properties of Konjac glucomannan depolymerized by ozone assisted with microwave treatment

Summary: Ozone-microwave treatment can effectively degrade and modify Konjac glucomannan (KGM) to improve its solubility properties and interaction with other polymers. Longer treatment time results in lower molecular weight and apparent viscosity of KGM, as well as more carbonyl contents introduced. The thermal stability of depolymerized KGM is decreased while its whiteness is enhanced, with significant changes in rheological properties compared to native KGM.

Influence of konjac glucomannan on thermal and microscopic properties of frozen wheat gluten, glutenin and gliadin

Summary: Different concentrations of konjac glucomannan (KGM) had varying effects on the denaturation properties of frozen wheat gluten proteins, with a positive impact on gluten and gliadin, and a decrease in denaturation temperature and enthalpy of glutenin. The addition of KGM increased the alpha-helix structure of frozen gluten and gliadin, while decreasing that of frozen glutenin, indicating a potential interaction mechanism between KGM and the proteins. The scanning electron microscopy results confirmed the enhanced interaction between wheat proteins and KGM.
