Buckwheat Hull-Enriched Pasta: Physicochemical and Sensory Properties

Summary: This study evaluated the effects of replacing semolina with ground buckwheat hull on the chemical composition, antioxidant properties, color, cooking characteristics, and sensory properties of wheat pasta. Qualitative properties of cookies enriched with berries pomace

Development and quality evaluation of cookies supplemented with concentrated fiber powder from chiku (Manilkara zapota L.)

New lignans from the fruits of Leonurus japonicus and their hepatoprotective activities

Enrichment of antioxidants compounds in cookies produced with camu-camu (Myrciaria dubia) coproducts powders

Incorporating up to 20% of camu-camu coproduct powder did not affect the physical properties of the cookies but improved their total phenolic and antioxidant potential.

The use of these additives represents a promising development in food technology to enhance the nutritional value and prolong the shelf-life of bakery products.
