Combined calcium pretreatment and ultrasonic/microwave drying to dehydrate black chokeberry: Novel mass transfer modeling and metabolic pathways of polyphenols

Summary: In this study, black chokeberries were dehydrated using sequential calcium pretreatment and ultrasonic/microwave drying. The study investigated the water transport mechanisms and polyphenol metabolic pathways. A diffusional model was modified to simulate moisture transport by considering factors such as shrinkage, porosity, and temperature-dependent water diffusivity. The study revealed the spatio-temporal evolutions of cytoplasm water, extracellular water, and total water content in black chokeberry during drying. The quality attributes related to polyphenol metabolic pathways and the effects of drying treatments were analyzed in detail.

Inactivation of pectinmethylesterase in fresh orange juice by cold atmospheric plasma technology: A kinetic study

Summary: Cold atmospheric plasma can effectively inactivate pectinmethylesterase (PME) in freshly squeezed orange juice in a short time. Temperature increase has little effect on PME inactivation. Plasma treatment can inactivate 55-80% of PME in orange juice. A multi-parameter equation can predict PME inactivation based on applied voltage, helium flow, and treatment time.

Infrared and Microwave as a dry blanching tool for Irish potato: Product quality, cell integrity, and artificial neural networks (ANNs) modeling of enzyme inactivation kinetic

Summary: This study evaluated the use of infrared (IR) and microwave (MW) dry blanching technology as an alternative to conventional hot water (HW) blanching for Irish potato slices. The results showed that MW blanching had the shortest POD inactivation time and MW blanched samples had lower color change, slower moisture loss, and lower microbial activity compared to HW and IR blanching. MW blanching also had lower electrolyte leakage and micro-structure damage, and better texture compared to HW and IR blanching. Artificial neural networks (ANNs) outperformed Weibull distribution in fitting the POD inactivation curve. In conclusion, IR and MW technology were efficient in dry blanching of Irish potato, and ANNs allowed for smart industrial control and monitoring of dry blanching equipment.

At the same input ultrasound intensity level, contact ultrasound received more ultrasound energy than airborne ultrasound, promoting a more comprehensive exchange of heat and moisture, resulting in a more uniform drying effect.
