Evaluation by a GC Electronic Nose of the Differences in Volatile Profile Induced by Stopping Fermentation with Octanoic and Decanoic Acid to Produce Sweet Wines

Summary: Medium-chain fatty acids can be used for the production of naturally sweet wines by inhibiting the growth and fermentation of yeasts. Adding octanoic acid, decanoic acid, or their combinations can stop alcoholic fermentation and reduce the need for sulfur dioxide addition. The effect of these acids on the aroma profile of sweet wines was evaluated using a chromatographic electronic nose, which showed easily distinguishable differences between wines treated with octanoic and decanoic acids. The doses, type of acid, and yeast used during fermentation all influence the volatile profiles of the wines.

Microbial community starters affect the profiles of volatile compounds in traditional Chinese Xiaoqu rice wine: Assement via high-throughput sequencing and gas chromatography-ion mobility spectrometry

Summary: In this study, we investigated the microbial communities and flavoring substances of Xiaoqu rice wine using high-throughput sequencing and mass spectrometry techniques. The most prevalent microorganisms were identified, and 43 volatile flavoring compounds were detected. We also found significant correlations between certain microorganisms and specific flavor compounds. Our findings provide valuable reference data for improving the quality of Xiaoqu rice wine through targeted screening of beneficial bacteria and fungi based on flavor.

Saccharomyces cerevisiae strains with low-yield higher alcohols and high-yield acetate esters improve the quality, drinking comfort and safety of huangjiu

Summary: This study successfully obtained two high-quality Saccharomyces cerevisiae strains, jiangnan1# and jiangnan3#, through lab-scale huangjiu brewing and systematic evaluation. The production-scale huangjiu fermentation showed that jiangnan1# strain decreased higher alcohols (HAs) by 24.99% and increased acetate esters (AEs) by 36.35%. Sensory evaluation revealed that jiangnan1# huangjiu had a higher fruity aroma intensity compared to 85# huangjiu, which had higher acidity and honey aroma intensity.
