Summary: Styrian pumpkin seed oil, known for its nutty aroma and taste, contains less than 1% of ALA and potential oxidation products. This study found that downstream processing did not significantly alter the main fatty acid composition or triacylglycerol species in the oils. Different amounts of product phytoprostanes were produced in fresh Styrian and normal pumpkins, with specific phytofurans detected in the oil samples. Additionally, conditioned oils showed higher levels of phytoprostanes and phytofurans compared to cold-pressed native oils.

Bovine milk fatty acid and triacylglycerol composition and structure differ between early and late lactation influencing milk fat solid fat content

Summary: This study investigated the differences in bovine milk fatty acid (FA) and triacylglycerol (TAG) composition, FA positional distribution in the TAG structure, and milk solid fat content (SFC) between early lactation and late lactation. The results showed that cows in early lactation mobilized specific fatty acids from their body fat stores, resulting in increased concentrations of these fatty acids in milk fat.
