A review of the effects of COVID-19 on food waste

Giulia Borghesi et al.

Summary: The COVID-19 pandemic has highlighted the vulnerabilities in food production and consumption systems, emphasizing the need for sustainable practices. Research shows that consumers have reported behavioral changes during the pandemic, adopting sustainable practices to reduce food waste. The rapid diffusion of food delivery during the pandemic requires further investigation on its environmental effects. Supply-demand shocks and disruptions in production, processing, and retailing indicate ripple effects. The adoption of sustainable practices supported by policy is called for to enhance the resilience of the food system.

In-person, pick up or delivery? Evolving patterns of household spending behavior through the early reopening phase of the COVID-19 pandemic

Maher Said et al.

Summary: Consumer reactions to COVID-19 pandemic disruptions have been varied, including modifications in spending frequency, amount, product categories and delivery channels. This study analyzes spending data from a sample of 720 U.S. households during the start of deconfinement and early vaccine rollout to understand changes in spending and behavior one year into the pandemic. This paper finds that overall spending is similar to pre-pandemic levels, except for a 28% decline in prepared food spending. More educated and higher income households with children have shifted away from in-person spending, whereas politically conservative respondents are more likely to shop in-person and via pickup.

Obesity, eating behavior and physical activity during COVID-19 lockdown: A study of UK adults

Eric Robinson et al.

Summary: The COVID-19 crisis may have disproportionately impacted weight-related behaviors among UK adults, especially those with obesity. During the social lockdown, many participants reported negative changes in eating and physical activity behaviors, as well as experiencing barriers to weight management. Participants with higher BMI were particularly affected, showing lower levels of physical activity and diet quality, along with more frequent overeating. Reporting a decline in mental health due to the COVID-19 crisis was not associated with higher BMI, but was predictive of increased overeating and decreased physical activity during lockdown.
