The dynamics of physicochemical properties, microbial community, and flavor metabolites during the fermentation of semi-dry Hakka rice wine and traditional sweet rice wine

Min Qian et al.

Summary: The dynamics of physicochemical properties, microbial community, and flavor metabolites during fermentation of two typical Hakka rice wines were investigated. Results showed that the sweet rice wine had a significantly higher total sugar content, as well as higher amino acid contents compared to the semi-dry rice wine. The organic acids in Hakka rice wine showed an initial increase, followed by a decrease, and finally reached stability. The dominant bacterial genera in the fermentation process were Pediococcus, Bacillus, Acinetobacter, Pantoea, Enterobacter, and Lactobacillus, while the dominant fungal genera were Monascus, Saccharomyces, and Rhizopus, which were closely associated with the changes in flavor metabolites. These findings provide valuable reference data for optimizing Hakka rice wine fermentation.

Combination of untargeted metabolomics approach and molecular networking analysis to identify unique natural components in wild Morchella sp. by UPLC-Q-TOF-MS

Xiaoyan Zhao et al.

Summary: This study utilized a metabolomics approach to investigate the differential metabolites in Morchella sp. compared to other four edible fungi, identifying 18 compounds involving fatty acids and peptides with higher content in Morchella sp. A unique peptide was discovered, and molecular networking analysis revealed three novel homologous compounds, one of which was a previously unreported homolog. These findings were further confirmed by quantitative analysis, marking the first report of four peptides in Morchella sp.

Metabolomic analysis of browning mechanisms of morels (Morchella sextelata) during storage

Fanhui Gao et al.

Summary: This study aimed to clarify the browning mechanisms of morels during storage by analyzing metabolite changes. As storage time increased, morels gradually browned, with increased soluble quinone content and decreased total phenolic content. Metabolomics analysis revealed alterations in metabolic profiles, with increased amino acids and fatty acids and decreased soluble sugars, organic acids, and some phenolics during the browning process.

Impact of sourdough culture on the volatile compounds in wholemeal sourdough bread

Andrea Warburton et al.

Summary: The flavor profile of sourdough bread is influenced by the compounds generated during fermentation by yeasts and lactic acid bacteria. In this study, twelve different sourdough cultures were used to produce breads, and the volatile organic compounds (VOCs) and physicochemical features were analyzed. The results showed three distinct clusters of sourdough breads, with differences in VOCs and other characteristics related to yeast and LAB fermentation dominance.

Key aroma compounds of Chinese dry-cured Spanish mackerel (Scomberomorus niphonius) and their potential metabolic mechanisms

Siliang Wu et al.

Summary: The key aroma compounds of dry-cured Spanish mackerel were identified using various analytical methods, with 21-26 compounds showing high flavor dilution factors identified. Results indicated that a longer dry-curing time may promote the generation of aroma compounds. Metabolism analysis suggested potential metabolic mechanisms involving the auto-oxidation/oxidation of unsaturated fatty acids and the enzymatic degradation of L-leucine.

Juan Gao et al.

Summary: Seven enzyme groups were used to hydrolyze broken fruiting bodies of morel mushroom to extract umami substances. The hydrolysate obtained from Neutrase-Flavourzyme (NF) combination showed the best flavor properties, with the highest content of small peptides, free amino acids, and flavor 5'-nucleotides. The reaction conditions of NF were optimized by response surface methodology (RSM) to achieve the highest degree of hydrolysis.
