Summary: This study aimed to prepare ellagitannin nanoparticles from pomegranate peels using maltodextrin and lecithin as coating materials. The lecithin coated nanoparticles showed higher stability and encapsulation efficiency compared to maltodextrin coated ones. However, maltodextrin coated samples exhibited higher production efficiency and loading capacity. The thermal stability of nanoparticles formed with both coating materials significantly increased, indicating the success of the nanoencapsulation process in enhancing the stability, efficiency, and thermal resistance of ellagitannins.

Fungal growth was significantly hindered after the 8th week of storage, leading to a 78.6% decrease in total aflatoxin concentration in treated samples compared to untreated controls.
