A review of volatile compounds in edible macroalgae

Summary: Seaweeds are nutrient-rich and consuming them can provide important health benefits. However, the flavor of seaweed is important for consumer acceptance, and volatile compounds play a key role. This article reviews the extraction methods and composition of volatile compounds from various seaweed species. Research shows that these compounds mainly consist of aldehydes, ketones, alcohols, hydrocarbons, esters, acids, sulfur compounds, furans, and other compounds in small amounts.

Effect of thermal process on the key aroma components of green tea with chestnut-like aroma

Summary: This study analyzed the dynamic changes of key components and their precursors contributing to the chestnut-like aroma in green tea during the processing. The results showed that the thermal process significantly affected the volatile components in tea leaves, leading to changes in alcohols, esters, ketones, acids, phenols, and sulfur compounds. Additionally, 31 volatile compounds were identified as the key odorants responsible for the chestnut-like aroma, with most of them forming during the drying stage. Furthermore, certain amino acids and glucose were found to be involved in the formation of the aroma.

Volatilomics Analysis of Jasmine Tea during Multiple Rounds of Scenting Processes

Summary: Jasmine tea is reprocessed from finished tea by absorbing the floral aroma of jasmine through a process known as scenting. A study was conducted to investigate the volatile organic compounds (VOCs) and the formation of a refreshing aroma in jasmine tea as the number of scenting processes increases. The results showed that the aroma intensity of jasmine tea gradually intensifies with the number of scenting processes, and specific VOCs were identified as key odorants responsible for the refreshing aroma.

Variations of main quality components of matcha from different regions in the Chinese market

Summary: Matcha has a unique seaweed-like aroma that is popular among Chinese consumers. By analyzing the main quality components of 11 matcha samples from different regions in the Chinese market, it was found that most matcha samples had a lower ratio of tea polyphenols to amino acids, which contributes to the fresh and mellow taste of matcha. The variation in volatile components contributes to the regional flavor characteristics of matcha. This study provides a theoretical basis for the selection and application of matcha in drinks and tea products.

Revelation of volatile contributions in green teas with different aroma types by GC-MS and GC-IMS

Characterization of the key aroma compounds in infusions of four white teas by the sensomics approach

Summary: The aroma profiles of four traditional white teas were studied, and it was found that the aroma characteristics were mainly contributed by a few compounds. Floral and sweet characters were produced by geraniol and linalool, while woody and fermented notes were more prominent. Compounds produced from amino acid reactions during tea manufacturing formed fruity and refreshing attributes, and degradation products of glycosides and carotenoids contributed to the essential floral and sweet characters of white teas.

Effect of Yellowing Duration on the Chemical Profile of Yellow Tea and the Associations with Sensory Traits

Several key chemical constituents, including catechins, flavonol glycosides, caffeine, and amino acids, contribute to the elevated sweet and mellow taste. Additionally, sweet, woody, herbal, fermented, and fatty odorants are important contributors to the characteristic sensory features of yellow tea.

Analysis of taste characteristics and identification of key chemical components of fifteen Chinese yellow tea samples

Summary: In this study, quantitative descriptive analysis (QDA) and partial least squares regression (PLSR) were used to analyze the sensory characteristics and chemical components of 15 yellow tea samples from different regions of China. Cluster analysis divided all yellow tea samples into four categories, providing a theoretical basis for further research on the adjustment and control of tea taste quality.
