Iridoids and polyphenols from chilean Gaultheria spp. berries decrease the glucose uptake in Caco-2 cells after simulated gastrointestinal digestion

Summary: The study found that simulated gastrointestinal digestion has a significant impact on the content and composition of secondary metabolites from Gaultheria berries, with varying degrees of decreases in anthocyanins, flavonols, phenylpropanoids, and iridoids. Additionally, digested extracts showed inhibitory effects on in vitro carbohydrate metabolism and absorption, as well as reduced expression of glucose transporters and enzymes in cells.
