Exploring the suitability of Saccharomyces cerevisiae strains for winemaking under aerobic conditions

Jordi Tronchoni et al.

Summary: The study revealed significant diversity in acetic acid yield among different S. cerevisiae strains under aerobic conditions, with some strains showing very low volatile acidity. Ethanol yields were lower under aerobic than under anaerobic conditions for all strains, and acetic acid levels were low for two of them. This research paves the way for simplified aerobic fermentation protocols aimed at reducing the alcohol content of wines.

Biotechnological Approaches to Lowering the Ethanol Yield during Wine Fermentation

Ramon Gonzalez et al.

Summary: Global climate warming leads to an increase in sugar content in grapes and alcohol level in wines. Researchers are exploring biotechnological solutions such as genetic improvement to lower alcohol yields and develop commercial yeast strains with reduced ethanol production. The optimization of fermentation processes using natural isolates is expected to be the most probable source of advancement in the short term.

Techniques for Dealcoholization of Wines: Their Impact on Wine Phenolic Composition, Volatile Composition, and Sensory Characteristics

Faisal Eudes Sam et al.

Summary: The trend in wine dealcoholization techniques is towards the partial or complete removal of alcohol, with physical and thermal distillation techniques being the most commonly used, but these techniques can impact the sensory quality and acceptance of wine.

'Sugarcoating' 2-deoxyglucose: mechanisms that suppress its toxic effects

Martin C. Schmidt et al.

Summary: Yeast and cancer cells rely on glucose fermentation for energy generation, making them sensitive to the toxic glucose analog, 2-deoxyglucose. Understanding the pathways involved in 2-deoxyglucose sensitivity and resistance in these cells can provide insights for designing combinatorial therapies for cancer treatment. Genetic and proteomic studies in yeast have offered new ideas for developing effective treatment strategies.
