Use of chia seed mucilage as a texturing agent: Effect on instrumental and sensory properties of texture-modified soups

The hydrogels, adaptable to the intestinal environment, were identified as reliable and desirable soft materials for embedding and delivering Cur to the colon, showing potential applications in functional foods and biological therapeutic purposes.
