Structural and rheological behavior of β-lactoglobulins influenced by high hydrostatic pressure - From a single molecule to the aggregates

Summary: This study investigated the structures and rheological behavior of beta-lactoglobulins under high-hydrostatic-pressure treatment. The results showed that beta-lactoglobulins obtained from high concentrations and pressures had extensively unfolded structures and formed aggregates. These aggregates exhibited branching and densely packed structures, resulting in the formation of cold-set gels without the need for gelators. The fractal dimension of the gels revealed their network properties, which were mainly influenced by diffusion-limited clustering. The study suggests that it is possible to design and produce beta-lactoglobulin powders with desirable characteristics by controlling protein concentrations and pressures during high-hydrostatic-pressure processing.
