Analysis of gelatin secondary structure in gelatin/keratin-based biomaterials

Summary: This study investigates the structure and correlations between structure, mechanical, and biological properties of gelatin-based materials. Gelatin electro-spun materials have higher content of ordered structure compared to gelatin casted films, which may be attributed to the random coil - alpha-helix transition during electrospinning. The presence of cross linker (GPTMS) decreases the ordered structures in gelatin casted films, while it does not affect the percentage of ordered structure in electrospun samples. The presence of keratin in gelatin/keratin electrospun biomaterials decreases alpha-helix content and promotes the conversion from antiparallel to parallel beta-sheet.

Changes in Structures and Properties of Collagen Fibers during Collagen Casing Film Manufacturing

Summary: The changes in collagen fibers during the manufacturing process were investigated using various analysis methods. Acid swelling and homogenization resulted in depolymerization and uniform alignment of collagen fibers. Alkaline neutralization destroyed the triple-helix structure, which could be partially reversed through washing and soaking processes. Drying led to the formation of new structures with decreased thermal stability.

Encapsulation of Tea Polyphenol in Zein through Complex Coacervation Technique to Control the Release of the Phenolic Compound from Gelatin-Zein Composite Film

Summary: Green tea polyphenol (TP) was encapsulated in zein and fabricated into a gelatin-zein composite film by complex coacervation. Transglutaminase (TG) crosslinking was employed to obtain a compact structural orientation of the film to prolong the release of TP. The encapsulation efficiency of zein and the TP release rate from the composite film were investigated. The retention rate was over 30% and 80% after film fabrication and storage, respectively. Crosslinking decreased the diffusion coefficient by half, thus improving the release of TP from the film. The films showed significant antimicrobial activities against two food-borne bacteria. The result obtained shows that the encapsulation of TP and TG treatment may be used to fabricate gelatin-zein composite film with controlled release of phenolic compounds for active packaging applications.

Zein films were fabricated using various concentrations of aqueous acetic acid solvent and aqueous ethanol solvent, resulting in differences in solubility, mechanical properties, and zeta potential.

Summary: This study evaluated the influence of MgCl2 and CaCl2 ionic strength and ionic radius on the physicochemical properties of methylcellulose-based films, and assessed the effect of IS on eco-friendly colorimetric sensors for ammonia vapor detection. Zein-Based Films Containing Monolaurin/Eugenol or Essential Oils with Potential for Bioactive Packaging Application

The films exhibited enhanced tensile properties and antimicrobial activity against bacteria, yeasts, and molds. Chitosan/zein bilayer films with one-way water barrier characteristic: Physical, structural and thermal properties

Physicochemical properties of zein films cross-linked with glutaraldehyde

Summary: By using glycerol (GLY) and glutaraldehyde (GDA) as plasticizer and cross-linking agent, respectively, modified zein films were fabricated to improve mechanical properties. It was found that above 1 wt% GDA could reduce the tensile strength of the film, and the optimum films were obtained with 25 wt% GLY and 1 wt% GDA. The cross-linking mechanism involved lubrication by GLY between zein molecular chains and network formation through cross-linking reactions by GDA. These findings contribute to the development of eco-friendly, biodegradable polymers for packaging applications.
