Modification of soy protein isolate using dielectric barrier discharge cold plasma assisted by modified atmosphere packaging

Summary: In this study, soy protein isolate (SPI) was treated with modified atmosphere packaging (MAP) assisted dielectric barrier discharge (DBD) cold plasma (CP) to improve its functional properties. The results showed that increasing oxygen content can destroy the structure of SPI, but the primary structure remains intact. When the oxygen content is higher than 40%, the solubility, water holding capacity, gelling, emulsifying, and foaming properties of SPI are significantly improved.

Summary: In this study, the Pickering stabilizing capacity of Grass pea protein isolate (GPPI) was improved through cold plasma treatment. The plasma-treated particles showed improved interfacial properties, resulting in lower contact angle with oil and smaller oil droplets formation. The stabilized emulsions by the plasma-treated particles exhibited better flocculation and reduced oil droplet coalescence. The best stabilizing capacity was achieved with 18.6 kVpp treatment for 300 s, providing a new method for enhancing protein Pickering stabilization.

Effect of oxidative modification by reactive oxygen species (ROS) on the aggregation of whey protein concentrate (WPC)

Increasing oxidation time led to the accumulation of carbonyl groups, a decrease in alpha-helix structures, an increase in disordered structures, and the aggregation of secondary structures. The solubility and stability of initial aggregates were high due to flexible structures, but worsened with further oxidation, consistent with soluble protein content and stability index.
