Aggregating-agent-assisted surface-enhanced Raman spectroscopy-based detection of acrylamide in fried foods: A case study with potato chips

Summary: This study developed a simple, rapid, stable, and reliable technique for the detection of acrylamide (AAm) in fried foods using surface-enhanced Raman scattering (SERS). By optimizing the concentration of the aggregating agent and salt solutions, a linear relationship between the AAm concentration and characteristic peak area was established. The results of analyzing potato chips samples using this method were consistent with those obtained by the traditional method, demonstrating the potential of SERS in the qualitative and quantitative analyses of AAm in fried foods.

Fast synthesis of gold nanostar SERS substrates based on ion-track etched membrane by one-step redox reaction

Summary: Surface-enhanced Raman scattering (SERS) is a powerful technique for label-free ultrasensitive detection of chemical and biochemical analytes due to its high detecting sensitivity and rapid data acquisition ability. In this work, a PC membrane with uniform nanopores obtained by ion irradiation and chemical etching was used to prepare a gold nanostar SERS substrate. By optimizing the growth conditions, the SERS substrate with uniform monolayer gold nanostars can be fabricated quickly and exhibits excellent Raman performance.
