Non-covalent interaction of soy protein isolate and catechin: Mechanism and effects on protein conformation

Summary: Understanding the interaction mechanism between proteins and polyphenols is crucial for the application of protein-polyphenol compounds in food. This study showed that non-covalent modification of soy protein isolate (SPI) with catechin resulted in aggregation and network-like structure formation. The increased catechin concentration caused SPI to become looser and more disordered, with an opened internal structure and exposed hydrophobic groups. The main forces between SPI and catechin were found to be hydrophobic interactions and hydrogen bonds.

Summary: Tea extracts, especially theaflavin-rich black tea extracts, showed significant inhibition of sucrase-isomaltase activity, retardation of hydrolysis of sucrose, maltose, and isomaltose, and dose-dependent inhibition of glucose transport. Green tea extracts were most effective against sodium-dependent glucose cotransporter 1 (SGLT1) and could be used in the management of glucose transport. Black tea extracts also inhibited glucose transport by suppressing Na+/K+-ATPase, reducing the energy needed for SGLT1 to actively transport glucose. This study suggests that tea could be used as a functional food to modulate postprandial hyperglycemia for diabetic patients.

Characterization of selenized polysaccharides from Ribes nigrum L. and its inhibitory effects on α-amylase and α-glucosidase
