Effects of microbial transglutaminase on the gelling property and in vitro digestibility of fish scale gelatin from grass carp

Summary: In this study, microbial transglutaminase (MTG) was used to improve the gelling property of fish scale gelatin (FSG) from grass carp. The cross-linking of FSG by MTG increased its gel strength, textural property, and thermal property, with the effects varying with the concentration of MTG. In addition, the cross-linking of FSG by MTG also enhanced its digestion time and the release of unique peptides during gastric and intestinal digestion.

Strong fish gelatin hydrogels double crosslinked by transglutaminase and carrageenan

Summary: In this study, strong fish gelatin hydrogels were successfully prepared by double crosslinking gelatin with transglutaminase (TGase) and kappa-carrageenan, resulting in significantly improved mechanical properties and thermal stability. The highest gel strength, compression fracture stress, and storage modulus were achieved when the concentration of TGase was 20 U/g gelatin. The thermal stability of the double crosslinked gelatin hydrogels was attributed to the presence of covalent crosslinks. The effect of TGase concentration on the physical properties and microstructure of the double crosslinked hydrogels was analyzed, and the differences between double crosslinked gelatin hydrogels and gelatin hydrogels single crosslinked by TGase or carrageenan were systematically compared.

Phosphorylation modification on functional and structural properties of fish gelatin: The effects of phosphate contents

Summary: The gel, rheological and structural properties of fish gelatin (FG) were significantly improved through phosphorylation modification. Phosphorylation increased the gel strength, textural properties, emulsification, and emulsification stability of FG, as well as the surface hydrophobicity and intrinsic fluorescence. Phosphorylation with TSPP increased the apparent viscosity, melt/gel points, and gel strength of FG, while shortened the gelation time. Furthermore, it reduced the mobility of water in FG and altered its structural characteristics.

Effect of k-carrageenan on the gelation properties of oyster protein

Effect of different κ-carrageenan incorporation forms on the gel properties and in vitro digestibility of frankfurters

Transglutaminase modified type A gelatin gel: The influence of intra-molecular and inter-molecular cross-linking on structure-properties

Summary: This work investigates the structure-property differences and mechanisms of gelatin induced by transglutaminase (TGase) covalent cross-linking. It is found that a higher hardness is achieved at a cross-linking degree of 13.55% through an active intra-molecular cross-linking and a tight network structure. The inter-molecular cross-linking facilitates the transition from random coil to left-handed single helix chains, while the formation of triple helix-like structure is hindered, resulting in a decrease in hardness and increase in viscosity. The epsilon-(gamma-Glu)-Lys isopeptide bond significantly increases the initial degradation temperature. Macromolecular polymers with a cross-linking degree of 37.48% can maintain the gel state of gelatin even when heated at 100 degrees C for 10 minutes. This study provides innovative references for the regulation and application of gelatin gel structure-properties.

Characteristics of fish gelatin-anionic polysaccharide complexes and their applications in yoghurt: Rheology and tribology

Summary: The study found that the viscosity of complex solutions increased with higher concentrations of xanthan gum and kappa-carrageenan, while lubrication properties decreased with increased anionic polysaccharide contents. FG-AP complexes improved firmness, water holding capacity, and viscosity of yoghurt, although gels were easily destroyed at high frequency. Additionally, compared to gelatin, FG-AP complexes provided better lubrication properties for yoghurt at low and medium sliding speeds, especially for FG-XG complexes.
