Effect of frying on the lipid oxidation and volatile substances in grass carp (Ctenopharyngodon idellus) fillet

Study of the formation of food hazard factors in fried fish nuggets

Summary: The frying time and pretreatment of fried fish nuggets affect the formation of food hazard factors, with an extension of frying time promoting lipid oxidation and the formation of these factors. When comparing samples fried for the same amount of time, flour-coated fish nuggets had higher levels of certain food hazards compared to directly fried fish nuggets. CML and BaP were identified as the main food hazard factors in directly fried samples, while AA was the main factor in flour-coated fried samples.

Effect of frozen storage on the lipid oxidation, protein oxidation, and flavor profile of marinated raw beef meat

Influence of thermal processing on flavor and sensory profile of sturgeon meat

Aroma compounds identified in cooked meat: A review

Summary: This review summarizes the research on odorants in cooked meat and discusses their formation mechanisms. A total of 332 odorants were identified, including compounds from lipid degradation, Maillard reaction, and other sources. Short-chain aliphatic aldehydes and sulfur- or nitrogen-containing heterocyclic compounds were found to be the frequently potent odorants in different cooked meat species. The analysis suggests that the variation of odorants is mainly due to lipid degradation. This review provides guidance for improving the flavor of cooked meat and meat flavorings.

Formation of advanced glycation end-products in silver carp (Hypophthalmichthys molitrix) surimi products during heat treatment as affected by freezing-thawing cycles

Formation of AGEs in fish cakes during air frying and other traditional heating methods

Summary: This study investigated the formation of Advanced Glycation End Products (AGEs) in fish cakes under different cooking methods. The results showed that the AGEs contents on the surface of fish cakes increased with prolonging heating time, while the interior contents were hardly influenced. The air-fried fish cake had a denser texture and similar color to the deep-fried fish cake.

Effect of Freeze-Thaw Cycles on the Oxidation of Protein and Fat and Its Relationship with the Formation of Heterocyclic Aromatic Amines and Advanced Glycation End Products in Raw Meat

Effects of different cooking methods on volatile flavor compounds of chicken breast

Impact of frozen storage duration of raw pork on the formation of advanced glycation end-products in meatballs

Summary: This study found that longer frozen storage durations of raw pork result in higher levels of advanced glycation end-products (AGEs) in meatballs. Additionally, there was a significant correlation between oxidative damage to raw pork and the levels of CML and CEL in meatballs, indicating that oxidative damage during frozen storage could promote the generation of AGEs in meatballs. Controlling oxidative damage in raw pork may help reduce AGEs levels in meatballs.

Dynamic changes in the qualities and heterocyclic aromatic amines of roasted pork induced by frying temperature and time
