Level of contamination with deoxynivalenol, zearalenone and fumonisins in cereal products - assessment of consumer exposure

Piotr Pokrzywa et al.

Summary: The main objective of this study was to determine the content of mycotoxins in cereal products and assess consumer exposure. The results showed that mycotoxin levels exceeded the permissible limit in only two cases, and the exposure dose was low and did not pose a health risk to consumers.

Chitosan nanoparticles loaded with garlic essential oil: A new alternative to tebuconazole as seed dressing agent

Maria Mondejar-Lopez et al.

Summary: Garlic essential oil was successfully encapsulated in chitosan nanoparticles in this study, which showed antifungal activity and growth-promoting effects on wheat, oat, and barley. Characterization of the nanoparticles revealed a regular distribution and spherical shape, with a size range of 200-400 nm.

Fungal inactivation on Mexican corn tortillas by means of thyme essential oil in vapor-phase

Fatima Reyes-Jurado et al.

Summary: The antifungal activity of thyme essential oil in vapor-phase was tested against representative fungi in corn tortillas. The major components of the oil were linalool, thymol, and p-cymene. Thyme essential oil effectively prevented or delayed the growth of contaminating molds on corn tortillas.

Development of an antioxidant formula based on peanut by-products and effects on sensory properties and aroma stability of fortified peanut snacks during storage

Ambrogina Albergamo et al.

Summary: The antioxidant formula based on peanut skins and hulls showed a high phenol content and antioxidant activity. Incorporating the formulation into snacks slightly enhanced astringent and bitter notes, but did not compromise sensory desirability. The aroma of the fortified snacks was defined by pyrazines, phenols, furans, and pyrrole derivatives, with a preservative effect observed during the first 15 days of storage.

Assessment of nanoencapsulated Cananga odorata essential oil in chitosan nanopolymer as a green approach to boost the antifungal, antioxidant and in situ efficacy

Neha Upadhyay et al.

Summary: This study investigated the comparative efficacy of Cananga odorata EO and its nanoencapsulated formulation against fungal contamination and lipid peroxidation. The results demonstrated that CoEO-CsNe completely inhibited fungal growth and AFB1 production, and showed improved antioxidant activity. The nanoencapsulated formulation has the potential to be used as a plant-based antifungal agent to extend the shelf-life of stored food.

Encapsulation of rose essential oil using whey protein concentrate-pectin nanocomplexes: Optimization of the effective parameters

Mina Kord Heydari et al.

Summary: This study aimed to optimize the preparation of whey protein concentrate (WPC)-pectin nanocomplexes as a carrier for rose essential oil (REO) using response surface methodology (RSM). The results showed that the highest encapsulation efficiency was achieved at a 4:0.5 ratio of WPC:pectin and pH = 3, while the highest stability was related to a 4:1 ratio of WPC:pectin at pH = 9. Additionally, the highest viscosity was obtained when using a 4:1 ratio of WPC:pectin and pH = 3, while the lowest stability was observed under the same conditions. Finally, the highest solubility was reported at pH = 9, with the lowest solubility seen at pH = 3 due to complex formation between WPC and pectin.

Inhibition of Aspergillus flavus growth and aflatoxins production on peanuts over α-Fe2O3 nanorods under sunlight irradiation

Di Sun et al.

Summary: The study demonstrated a green and economical method to control Aspergillus flavus on peanuts, with alpha-Fe2O3 nanorods showing efficient inhibition of fungal growth and spore germination under sunlight irradiation. The photocatalytic effect of alpha-Fe2O3 resulted in significant reduction of aflatoxin production without affecting peanut quality.
